Macarons
One of Zumbo's signature creations is the macaron. A macaron is a small round cake with a meringue-like consistency. Normal flavours include chocolate, but Zumbo has taken macarons to a whole new level.
Chocolate Mayo, chocolate H2O and vegemite are all some of Zumbo's creative flavours sold in his shops.
Croque-en-bouche
Croque-en-bouches are towering cakes that consist mainly of three parts: choux pastry, caramel and crème patissiere. Zumbo first brought his croque-en-bouches to Australia in the first season of Masterchef (an Australian food competition). Decorated with edible flowers, Zumbo's croque-en-bouche towers above all others.
V8 Cake
Probably one of Zumbo's most easily recognised creations. It is an extremely complex recipe with thirteen parts to create before assembling the final product. Pure white with a stylish flower on top, this is a cake for every occasion.
And so, with many things to try that Zumbo has made let's hope that this chef keeps cooking for a while yet.
Zumbo would say many things, and here are some things he would say about preparing and presenting food...
- All his recipes are made word-for-word from the recipe. So taking care in the temperature, measurement, and consistency is the most important thing to remember.
- Decorations, a lot of colour, bolds, and in your face colour are important in presenting. Passionfruit is yellow or blue, its not a pastel colour, so it pops out on the plate.
- Don't rush. Desserts take time and rushing them can cause you to make mistakes.
- Be organised. read through recipes before you start making them as if you don't, you might find yourself foreting something that takes an extra five minutes to make. This adds pressure and wastes time, so be careful.
- Never give up on a recipe. Keep trying and remember what worked and what didn't. There is no such thing as failure, just experience.
